Yummy Healthy Cookies

I love to bake, my husband Peter hates when I have unhealthy baked goods in the house.  Today, this was my compromise:

Pecan Cranberry Steel – Cut Oat Cookies

  • 3/4 cup butter
  • 1 1/2 cups baking stevia
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 3/4 cups spelt flour
  • 1/4 teaspoon sea salt
  • 2 eggs
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons ground cinnamon
  • 2 cups steel-cut oats
  • 3/4 cup chopped pecans
  • 3/4 cup dried cranberries

Directions:

  1. Preheat oven to 375 degrees.
  2. Cream butter.
  3. Add stevia, maple syrup, salt, baking powder, baking soda, eggs, vanilla, cinnamon and half the flour. Beat to combine.
  4. Beat in the remaining flour.
  5. Add oats, pecans and dried cranberriers
  6. Drop by rounded teaspoon on cookie sheet.
  7. Bake at 375 degrees for 12-15 minutes or until edges are golden brown.

So healthy I didn’t feel the least bit guilty about giving my 4 year old one for dessert.  Enjoy.
